Honey-Mustard Fruit Slaw

Ingredients

  • 1 1/2 cup cabbage, red, fresh, chpd
  • 1 cup carrot shredded
  • 2/3 cup apple (or pear) coarsley chopped
  • 4 tsp oil, veg, pure
  • 4 tsp mustard, dijon
  • 1 tbsp lemon juice, raw
  • 1 tbsp honey, amber
  • 2 garlic cloves minced
  • 2 tbsp peanuts (or cashews) chopped

Recipe Method

1. In a medium bowl toss together cabbage, carrot and the apple; set aside.

2. For dressing, in a small screw-top jar combine salad oil, mustard, lemon juice, honey and garlic. Cover and shake well. Pour dressing over cabbage mixture; toss gently to coat. Cover and chill for at least 2 hours or up to 24.

3. To serve, sprinkle the cabbage mixture with nuts.
