Melon & Watercress Salad

The tangy dressing in this recipe perfectly compliments the the watercress.

Ingredients

  • 4 cups watercress sprigs
  • 1 1/2 cup arugula leaves
  • 3 cup watermelon, cantaloupe and/or honeydew melon balls
  • 2 oranges, medium peeled and sectioned
  • 1/2 red onion cut into slices
  • 1/4 cup pecan or walnut halves lightly toasted
  • 2 tbsp mint leaves thinly sliced
  • 1/3 cup Citrus Vinaigrette *

Recipe Method

1. Line 4 salad plates with watercress sprigs and arugula leaves. Arrange melon balls, orange sections, red onion slices, toasted nuts and mint on top of greens.

2. Drizzle with Citrus Vinaigrette.
