Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 2 garlic cloves minced
  • 2 1/2 cup broth, chicken, light, fat free, rducd sod, cnd
  • 1 cup rice, white, long grain, enrich, dry
  • 1 1/2 cup mushrooms sliced
  • 1/2 cup green onion
  • 1/4 cup bell pepper
  • 2 tsp lemon zest
  • 1/8 tsp pepper
  • 2 tbsp pecans chopped, toasted

Recipe Method

1. Coat an unheated large nonstick saucepan with nonstick cooking spray. Preheat over medium heat. Cook garlic for 30 seconds. Add chicken broth and rice. Bring to a boil, reduce heat. Cover and simmer for 10 minutes.

2. Add mushrooms, green onions, sweet pepper, lemon peel and black pepper. Cover and cook for 10 to 15 minutes more or until liquid is absorbed and rice is tender. Stir with toasted pecans.
