Roma-Style Spinach

A fast and very healthy side dish.

Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 1/4 cup raisins, golden seedless
  • 2 tbsp pinenuts or walnuts chopped
  • 1 garlic clove minced
  • 1/8 tsp salt, table
  • .05 tsp cayenne pepper (a dash)
  • 1 pound spinach torn (12 cups)
  • 1 tbsp cheese, parmesan, fresh, shredded

Recipe Method

1. Coat an unheated very large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add raisins, nuts, garlic, salt and cayenne pepper. Cook and stir about 1 minute or until garlic is slightly brown.

2. Add spinach; toss to coat. Cook and stir for 1 to 2 minutes or just until spinach is wilted and heated through. Sprinkle with Parmesan cheese.
