  • 1 cooking spray, 1/3 sec spray
  • 1 cup flour, all purpose, bleached, enrich
  • 3/4 cup sugar
  • 1 1/2 tsp apple pie spice
  • 1/2 tsp baking powder, double acting
  • 1/2 tsp baking soda
  • 1/8 tsp salt, table
  • 1 cup carrot finely shredded
  • 1/3 cup oil, cooking, natural blend, w/omegas
  • 1/4 cup milk, nonfat/skim, w/o add vit a
  • 3 egg whites, raw, lrg

Recipe Method

1. Lightly coat an 8x9x2-inch baking pan with nonstick cooking spray. Set aside.

2. In a large bowl combine flour, sugar, apple pie spice, baking powder, baking soda and salt. Add carrot, oil and milk. Stir to moisten. In a medium mixing bowl beat egg whites with an electric mixer on medium to high speed until stiff peaks form. Fold egg whites into carrot mixture.

3. Pour batter into prepared pan. Bake in a 350 F. oven for 30 to 35 minutes or until a toothpick inserted near the centre comes out clean. Cool completely in pan on wire rack.
