Chocolate Chip-Yogurt Drops

A healthy version of an oatmeal chocolate chip cookie recipe.

Ingredients

  • 1 cup oats, rolled, old fashioned
  • 1/2 cup butter, salted
  • 1 cup sugar, brown, packed
  • 1 tsp baking soda
  • 1/4 tsp salt, table
  • 1 cup yogurt, plain, lowfat
  • 2 eggs, large, raw
  • 1 tsp vanilla extract
  • 2 1/2 cup flour, all purpose, bleached, enrich
  • 6 ounce-weight baking chocolate, bar, semi sweet

Recipe Method

1. Place oats in a shallow baking pan. Bake in a 375 F. oven about 10 minutes or until toasted, stirring once. Transfer to a food processor or blender. Cover and process or blend oats until ground; set aside.

2. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, baking soda and salt; beat until combined. Beat in yogurt, eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour and the oats. Stir in chocolate pieces.

3. Drop dough by rounded teaspoons 2 inches apart on ungreased cookie sheets. Bake at 375 F. for 9 to 11 minutes or until bottoms are browned. Transfer to a wire rack and let cool.
