Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 1 1/2 cup flour, all purpose, bleached, enrich
  • 1/4 cup sugar
  • 1 tsp ginger, ground
  • 1 tsp cinnamon, ground
  • 1/2 tsp baking powder, double acting
  • 1/4 tsp salt, table
  • 1/2 cup water, tap
  • 1/3 cup molasses
  • 3 tbsp butter, salted
  • 2 egg whites, raw, lrg
  • 9 tbsp topping, whipped, low fat, fzn

Recipe Method

1. Lightly coat an 8x8x2-inch baking pan with nonstick cooking spray; dust lightly with flour. Set aside.

2. In a large mixing bowl combine the 1 1/2 cups flour, sugar, ginger, cinnamon, baking powder, baking soda and salt. Add the water, molasses, butter and egg whites. Beat with an electric mixer on low to medium speed until combined. Beat on high speed for 2 minutes. Spread into prepared pan.

3. Bake in a 350 F. oven about 20 minutes or until a toothpick inserted near the centre comes out clean. Cool in pan on a wire rack for 10 minutes. Remove cake from pan. Serve warm with whipped topping.
