Baked Sweet Potatoes with Tomato Salsa

Ingredients

  • 2 swee tpotatoes, large about 9 oz. each
  • 1 tbsp oil, olive, extra virgin
  • 2 tomatoes finely chopped
  • 1/2 small red onion finely chopped
  • 1 celery stalk finely chopped
  • 1/2 cup cilantro (handful) chopped
  • 2 tbsp lime juice, raw
  • 2 tsp sugar
  • 2 ounce-weight Emmental cheese (or cheddar) grated

Recipe Method

1. Scrub the potatoes and place them in a small roasting pan. Prick with a fork and drizzle with oil and a little salt. Bake in a preheated oven at 400 F. for 45 minutes until tender.

2. Meanwhile, in a bowl, combine the tomatoes, onion, celery, cilantro, lime juice and sugar.

3. Halve the potatoes and fluff up the flesh with a fork. Sprinkle with cheese and serve topped with the salsa.
