Cocoa-Nutmeg Snickersticks

Ingredients

  • 1/3 cup butter softened
  • 2 tbsp sugar
  • 1 tsp baking powder, double acting
  • 1/2 tsp nutmeg, ground
  • 1/4 tsp baking soda
  • 1/3 cup sour cream, fat free
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cup flour, all-purpose
  • 1 1/2 tsp cocoa powder unsweetened

Recipe Method

1. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup sugar, baking powder, nutmeg and baking soda; beat until combined. Beat in the sour cream, egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Cover and chill for 2 hours or until dough is easy to handle.

2. In a shallow dish combine the 2 T. sugar and cocoa powder. Roll dough into 1" balls; shape into 3"-long logs. Roll logs in cocoa mixture to lightly coat. Place 1 1/2" apart on ungreased cookie sheets.

3. Bake in a 375 F. oven for 8 to 10 minutes or until edges are lightly golden brown. Transfer cookies to a wire rack and let cool.

To Store: Place cooled cookies in a freezer container. Seal, label and freeze for up to 3 months.
