Mascarpone, Feta & Herb Pate

A delicious yet very healthy appetizer.

Ingredients

  • 8 ounce-weight cheese, mascarpone
  • 6 tbsp milk, nonfat/skim, w/o add vit a
  • 7 ounce-weight feta cheese cut into small dice
  • 1/2 celery stalk finely diced
  • 1/2 cup black olives pitted, roughly chopped
  • 2 green onions finely chopped
  • 2 garlic cloves crushed
  • 1 tbsp mint, fresh chopped
  • 1 tbsp parsley, fresh chopped
  • 1/8 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground

Recipe Method

1. Place the mascarpone cheese into a bowl and beat lightly to soften. Stir in sufficient milk to give the consistency of thick yogurt.

2. Add the feta cheese, celery, olives, green onions, garlic, herbs and seasoning. Gently fold ingredients together until combined.

3. Turn into a serving bowl, cover and chill until ready to serve. Serve with crackers or flatbreads.
