Deef Fried Tofu in Amber Sauce
1. Wrap the tofu in paper towels and let it sit for 30 minutes on a tilted surface area to let excess water out.
2. Mix together cornstarch and water until cornstarch is completely dissolved.
3. To make the amber sauce combine dashi, sugar, mirin, soy sauce in a sauce pan and bring to a boil.
4. Add cornstarch mixture into sauce slowly until the sauce thickens to the proper consistency.
5. Preheat oil to 340 -350 F, or dip a bamboo skewer in the oil until bubbles start to form around the stick.
6. Deep fry Tofu until it turns a golden brown color.
7. Strain the Tofu and pat off excess oil with paper towels
8. Place in a serving bowl and pour over amber sauce.
9. Garnish with minced ginger and chopped green onions
