Millet, Fruit & Nut Granola

Ingredients

  • 3 1/2 ounce-weight millet flakes
  • 1/2 cup mixed nuts chopped
  • 1/2 cup raisins, golden seedless
  • 1/2 cup apricots, prunes or dates dried, chopped
  • 1/3 cup coconut, dry unsweetened shredded (or flaked)
  • 3 tbsp sunflower seeds
  • 2 tbsp linseeds (flax)

Recipe Method

1. Place the millet and nuts in a heavy skillet and cook over a gentle heat, stirring frequently for 2 to 3 minutes until they begin to colour. Tip them into a bowl and let cool for 10 minutes.

2. Add the dried fruits, coconut and seeds and mix together well. Serve with either milk or fruit juice. Store in a jar or bowl for up to one week.
