Spicy Fruit & Seed Bread

With its lovely crumbly texture and intense flavours, this tasty bread makes a perfect lunch served with a simple tomato, onion and soft cheese salad.

Ingredients

  • 1 1/2 cup chickpea flour (besan)
  • 1 cup flour, potato, pure, gluten & wheat free
  • 2 tsp yeast, baker's, dry active
  • 1 tsp salt, table
  • 1 tsp sugar
  • 1 tsp black onion seeds (nigella, an Indian spice)
  • 1 tbsp spice, cumin, seeds
  • 2 tsp herb, coriander, ground
  • 1/4 tsp spice, chili pepper, red, crushed flakes
  • 1/3 cup mango or pear dried
  • 2 tbsp oil, peanut
  • 1 cup water warm/hot from tap

Recipe Method

1. In a large bowl, mix together the flours, yeast, salt, sugar, spices and dried fruit.

2. Add the oil and water; mix to a stiff paste.

3. Turn into a greased 1 lb. loaf pan, cover loosely with oiled plastic wrap, and leave in a warm place for about 45 minutes until the dough rises slightly above the top of the pan. Remove the plastic wrap.

4. Bake in a preheated ove at 400 F. for 20 to 25 minutes until firm to the touch. Loosen the edges of the loaf with a knife and turn out on to a wire rack to cool.
