A delicious, yet simple, recipe that allows for improvisation.
1. Mix the garlic with 2 T. of the olive oil and a little seasoning. Put the bread on a cookie sheet and toast it on one side under a hot broiler. Turn the slices over, brush with the garlic oil and toast until golden.
2. Arrange the roasted red peppers over the bread and top with the goat's cheese slices. Return to the broiler and cook for about 1 minute to heat through.
