Toasted Open Sandwiches

A delicious, yet simple, recipe that allows for improvisation.

Ingredients

  • 2 garlic cloves crushed
  • 3 tbsp oil, olive, extra virgin
  • 4 slices bread, gluten-free whole grain
  • 7 ounce-weight jar roasted red peppers
  • 3 1/2 ounce-weight goat's cheese firm, thinly sliced
  • 8 olives, black, extra lrg, pitted, cnd
  • 1 tbsp vinegar, balsamic
  • 1/8 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground

Recipe Method

1. Mix the garlic with 2 T. of the olive oil and a little seasoning. Put the bread on a cookie sheet and toast it on one side under a hot broiler. Turn the slices over, brush with the garlic oil and toast until golden.

2. Arrange the roasted red peppers over the bread and top with the goat's cheese slices. Return to the broiler and cook for about 1 minute to heat through.

3. Transfer the sandwiches to serving plates. Scatter with olives and drizzle with the remaining olive oil and balsamic vinegar.

Variation: You can vary the toppings to suit your taste. Try a layer of ready-made pesto topped with halved cherry tomatoes and canned white beans (rinsed and drained). Drizzle with olive oil and balsamic vinegar.
