A great side dish for BBQ's, Pot Luck Dinners or just as is.

Quick 'n' Easy Potato salad that's considered a "classic".

Ingredients

  • 18 serving nugget potatoes cubbed
  • 1 1/2 cup mayonnaise
  • 2 tsp celery seed
  • 2 1/2 cup green onion chopped
  • 5 eggs, hard bld, chpd
  • 1 soup, cream of celery, cond, 10.75oz can
  • 1/4 cup vinegar, red wine
  • 1 1/2 cup celery, fresh, diced
  • 1 cup green bell pepper finely chopped
  • 1/2 cup red bell pepper finely chopped
  • .15 tsp paprika

Recipe Method

1- In large pot cook potatoes until cooked but still firm.

2- In separate mixing bowl combine mayonnaise, celery seed, green onion, cream of celery soup, red wine vinegar, celery, green pepper,red pepper, salt & pepper and paprika. Blend and mix thoroughly. Add chopped hard boiled egg and cubed cooked potatoes. Stir together until well blended - do not over blend.

Serve and garnish with a sprig of parsley

For best results cover and refrigerate up to 4 hours.
