Salsa Sauce

This is cooked and you can add peppers as you taste.

This salsa sauce is better than store bought and is fairly easy to make. You can make it as hot or mild as your taste buds can take and with the zucchini in it, you can stretch it out. You can't taste the zucchini and its a good healthy filler.

Ingredients

  • 20 tomatoes, fresh, med
  • 10 jalapenos chopped
  • 1/2 cup vinegar, distilled, white, dry
  • 1/4 cup salt, table
  • 4 cans tomato paste, cnd
  • 1 1/2 tsp dry mustard
  • 1 cup green or red chilies chopped
  • 6 garlic, cloves, fresh
  • 1/2 cup lemon juice, raw
  • 1/4 cup parsley, fresh
  • 1 tsp spice, chili pepper, cayenne, dried, ground
  • 2 squash, zucchini, baby, med, fresh

Recipe Method

1- Blanch tomatoes and remove skins. Cut in quarters.

2- Chop onions, peppers, parsley zucchini's and garlic into size preferred (ie thick or thin).

3- Put ingredients in large pot and simmer about 2 hours, stirring often. Adjust sugar to sweetness of tomatoes.

***Adjust peppers to degree of hotness desired.

Can or preserve as you would spaghetti sauce.
