Ingredients

  • 1 tbsp peanut oil
  • 2 ounce-weight popping corn
  • 3 1/2 ounce-weight milk chocolate
  • 3 1/2 ounce-weight semi-sweet chocolate
  • 2 tbsp butter
  • 1/4 cup nuts
  • 1/4 cup raisins
  • 2 ounce-weight white chocolate chips

Recipe Method

1. Pop the corn. Let cool so it can be handled with hands.

2. Scoop out 18 cups of popped corn, crush it with your hands into smaller pieces.

3. Melt the chocolate with the butter in a large bowl. Stir in the crushed popcorn, nuts and raisins until evenly combined. Gently stir in the chocolate chips.

4. Lay a sheet of parchment paper on your working surface and spoon the chocolate mixture across the centre. Bring the paper up around the chocolate mixture , shaping and packing it into a roll about 12 inches long. Chill for at least two hours until firm.

5. To serve, unwrap the roll and cut into chunky slices with a sharp knife.

Variation: For a more adult version, you could use 7 oz. semi-sweet chocolate instead of the mix of milk and semi-sweet. And substitute milk chocolate for the white chocolate.
