These mini potato pizzas are great for kids' parties.*
1. Cut the potatoes in small chunks and cook in boiling, lightly salted water for about 15 minutes until tender. Drain thoroughly, return to saucepan and leave to cool for 10 minutes.
2. Oil a large cookie sheet; set aside.
3. To the potatoes, add 2 tablespoons of the oil, the egg and half the grated cheese. Mix well. Turn out onto the prepared cookie sheet and spread to a 10-inch round. Bake in a preheated oven at 400 F. for 15 minutes.
4. Remove from oven and spread with the tomato paste or ketchup. Arrange the tomato and mozzarella slices on top. Scatter with the remaining grated cheese, thyme and a little salt. Drizzle with the remaining oil.
5. Return to oven for a further 15 minutes until the potato is crisp around the edges and the cheese is melting.
*For individual pizzas, divide the mixture into six circles on the cookie sheet.
