1. Slice the green onions diagonally, then shred the bok choy or cabbage.
2. Put the stock, sugar, vinegar and soy sauce in a large saucepan and bring to a boil.
3. Gently heat the oil in a skillet. Add the green onions and boy choy or cabbage and cook very gently for 3 minutes to soften.
4. Break the noodles into short lengths and add to the stock with the vegetables, fresh ginger and shrimp. Heat through gently for 2 minutes and serve immediately.
