Thai Shrimp & Noodle Soup

Ingredients

  • 6 green onions (or more if desired)
  • 7 ounce-weight bok choy or green cabbage
  • 5 cup chicken broth
  • 1 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 ounce-weight rice noodles
  • 1/4 cup ginger root finely chopped
  • 8 ounce-weight shrimp peeled

Recipe Method

1. Slice the green onions diagonally, then shred the bok choy or cabbage.

2. Put the stock, sugar, vinegar and soy sauce in a large saucepan and bring to a boil.

3. Gently heat the oil in a skillet. Add the green onions and boy choy or cabbage and cook very gently for 3 minutes to soften.

4. Break the noodles into short lengths and add to the stock with the vegetables, fresh ginger and shrimp. Heat through gently for 2 minutes and serve immediately.
