A simply, lovely "comfort" dessert for family dinner. You can serve this warm or chilled. It's pretty if baked in a glass casserole dish.
1. Pre-heat oven to 350 degrees.
2. In a large bowl, beat together butter, sugar and egg yolks until light and fluffy. Gradually add flour, salt, milk, lemon juice and lemon rind, beating until smooth.
3. In a separate bowl, beat the egg whites until soft peaks form; fold gently but thoroughly into lemon mixture.
4. Turn batter into greased, 6-cup casserole dish.Set casserole in a larger pan and pour in enough hot water to reach depth of 1 inch.
5.Bake at 350 degrees for 35-45 minutes, or until set and golden. Serve warm or chilled.
