A very fresh side salad, or top with grilled chicken for a main dish.
1. Squeeze 3 tbps lime juice into a large mixing bowl
2. Mix in vinegar and chili flakes
3. Peel mangoes, remove pulp pit, slice into julienne strips, put in mixing bowl
4. Julienne
5. Chop red onion fine, add with mint and coriander
6. Stand at room temp. for 1 hour
7. Taste and add additional lime juice if desired
Enjoy!
Optional: sprinkle a hand full of cashews on top
