Mango Salad

Awesome side with Asian chicken.

A very fresh side salad, or top with grilled chicken for a main dish.

Ingredients

  • 2 mango
  • 1 lime
  • 1 tbsp balsamic vinegar
  • 1 tsp chili pepper flakes
  • 1 1/2 cup red bell pepper
  • 1/2 cup red onion chopped
  • 1/2 cup coriander (cilantro), raw chopped
  • 1/2 cup peppermint, fresh chopped

Recipe Method

1. Squeeze 3 tbps lime juice into a large mixing bowl

2. Mix in vinegar and chili flakes

3. Peel mangoes, remove pulp pit, slice into julienne strips, put in mixing bowl

4. Julienne red pepper strips, put in mixing bowl

5. Chop red onion fine, add with mint and coriander

6. Stand at room temp. for 1 hour

7. Taste and add additional lime juice if desired

Enjoy!

Optional: sprinkle a hand full of cashews on top
