Stuffed Manicotti

Delicious!

This is a three cheese stuffed manicotti that is so good! You can add ham etc to jazz it up.

Ingredients

Manicotti
  • 8 piece dry manicotti pasta
Stuffing
  • 375 ml cottage cheese
  • 250 ml mozzarella cheese, shredded
  • 125 ml cheese, parmesan, grated
  • 2 eggs
  • 1 ml salt, table
  • 1/4 tsp pepper, black
Sauce
  • 50 ml parsley, chopped
  • 500 ml your favorite tomato sauce

Recipe Method

1- Preheat oven to 375 degrees F.

Manicotti
2- Cook manicotti to package directions. Drain.

Stuffing
1- Strain cottage cheese through sieve (you can also use ricotta cheese). Add mozzarella cheese, parmesan cheese, eggs, parsley, salt and pepper. Mix together.

2- With a spoon stuff three cheese mix into manicotti shells.

3- Pour 1/2 cup of your favorite pasta sauce into the bottom of a dish 7" x 11" (approx 17 cm x 28 cm) baking dish. Arrange manicotti over the sauce and spread the balance of the sauce over the top.

Bake for about 30 minutes or until manicotti are hot.

Serve with fresh french bread.
