Oyako means parent and child in Japanese and this is a reflection of how both the chicken and the egg is present in the dish. Don simply means rice bowl.
1. Cook rice in rice cooker in the proportion 1 cup of rice to 1.1 cup of water.
2. Cut Chicken into 3/4 inch cubes. Cut the onions into thin slices, and then chop green onions diagonally.
3. Combine dashi, sugar, mirin, soy sauce and light soy sauce in a pot and bring to a boil. Then add the chicken and boil briefly until 3/4ths of the way cook or approx 10-15 minutes.
4. Beat the eggs in a bowl and slowly pour into the pot in a circular motion.
5. Be careful not to fully cook the eggs as you want them a little soft and eggy.
6. Place oyako don mixture over some hot rice. The heat of the rice should be sufficient to fully cook the eggs.
