Sweet Potato Soup

Warm soup for winter nights.

Ingredients

  • 6 sweet potatoes
  • 6 carrots
  • 1 tbsp fresh ginger minced
  • 8 cup vegetable stock
  • 8 cup water

Recipe Method

1- Combine all vegetables, ginger, water and vegetable stock in a large pot.

2- Cover and boil until vegetables are soft. About 30-45 minutes. Add salt and pepper to taste.

3- Puree and serve
