Warm Caesar Pasta Salad

Great version and healthier than the usual caesar.

Sauce is great over cooked vegetables, fish or other proteins.

Ingredients

  • 1 egg
  • 3 ounces anchovies chopped
  • 3 tbsp olive oil
  • 2 tbsp parmesan cheese grated
  • 1 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 2 tsp dijon mustard
  • 2 tsp garlic minced
  • 2 cup romaine lettuce chopped
  • 2 ounce prosciutto sliced
  • 12 ounce penne pasta

Recipe Method

1- Put egg, anchovies, olive oil, parmesan, lemon juice, vinegar,mustard and garlic in food processor, process until smooth.

2- Combine lettuce and prosciutto in large bowl.

3- Prepare pasta according to package directions and cool. Once cool add pasta to lettuce mixture.

4- Pour dressing over pasta and toss.
