Traditional Filipino dish usually served with a cup of hot steamed rice. A soy sauce based meat stew.
1. Cut pork belly into 3/4 inch cubes and set aside.
2. Crush garlic with the flat end of your knife and chop roughly.
3. Crush black peppercorns using a small pot, or a rolling pin.
4. Heat up a pan with a little bit of oil, make sure oil is smoking before adding your pork belly.
5. Brown each side for 10 seconds before lowering heat, then browning meat for another 3 minutes on each side. This will allow the meat to naturally caramelize.
6. add the crushed garlic, and stir fry for a few seconds.
7. Add vinegar, soy sauce, water, bay leaf and crushed black peppercorns.
8. Cook uncovered for 10-15 minutes.
9. Add sugar, and cook covered for another 20-25 minutes or until fork tender.
10. Serve with a bowl of white rice.
