Chili Con Carne

Delicious! Perfect for a cold day and for freezing.

A nice recipe I have made for years. For my husband I put in more cayenne pepper and for my daughter I omit that ingredient because she doesn't like spicy things.

Ingredients

  • 25 ml oil, vegetable
  • 375 ml onion chopped
  • 15 ml garlic cloves minced
  • 500 gram ground beef (or turkey)
  • 50 ml chili powder
  • 5 ml salt
  • 3 ml oregano crushed
  • 1 ml pepper, black
  • 1/2 ml cayenne pepper
  • 156 ml tomato paste, cnd
  • 750 ml beef broth
  • 540 ml red kidney beans

Recipe Method

1- In a saucepan cook onion and garlic in oil over medium heat. Add meat and brown ( I sometimes use ground turkey). Add seasonings, if you like it really hot and spicy add more cayenne pepper. Stir well and add beef broth.

2- Bring to a boil; partially cover and simmer for 45 minutes. Add well drained beans and cook for another 15 minutes longer.

I grate some cheddar cheese on top and sprinkle chopped green onion then serve with some crusty bread!
