Onion Pie

If you love onions.....

A delicious and rich pie, accompany with a sylvaner wine from Domaine de Chaberton. A bit of effort but worth it.

Ingredients

Crust
  • 1 9" pie crust
Bechamel Sauce
  • 2 cup milk
  • 1/2 cup flour
  • 1/4 cup butter
  • 1/8 tsp salt
  • 1/8 tsp pepper, black
  • 1/8 tsp spice, nutmeg, ground
  • 2 egg yolks
Filling
  • 1/2 pound onions, chopped
  • 1/3 cup butter
  • 4 ounce bacon

Recipe Method

1- Slice onions and cook them in the oil until they are slightly browned.

2- To prepare the bechamel sauce; melt the butter, add flour (do not let it brown), then add the milk (mixing well to avoid lumps). Season to taste with salt, pepper, nutmeg. Bring to a boil, remove from heat and mix in egg yolks. Then add onions to this mixture.

3- Cook bacon and chop into small pieces.

4- Put crust in pie dish and pour in onion mix (only fill pie crust to the half way point as the mixture will puff up and fill the pie crust). Sprinkle bacon on top.

Bake at 350 for 20-25 minutes. Serve hot.
