A delicious and rich pie, accompany with a sylvaner wine from Domaine de Chaberton. A bit of effort but worth it.
1- Slice onions and cook them in the oil until they are slightly browned.
2- To prepare the bechamel sauce; melt the butter, add flour (do not let it brown), then add the milk (mixing well to avoid lumps). Season to taste with salt, pepper, nutmeg. Bring to a boil, remove from heat and mix in egg yolks. Then add onions to this mixture.
3- Cook bacon and chop into small pieces.
