Ingredients

  • 2 pound ground beef
  • 1 cup red onion chopped
  • 1 garlic cloves minced
  • 1 cup green bell pepper chopped
  • 1 zucchini squash chopped
  • 10 white mushrooms sliced
  • 1 1/2 jalapenos minced
  • 15 ounce-weight chili style beans
  • 14 ounce-weight tomatoes, diced, cnd
  • 1 1/2 tsp chili powder
  • 1 tsp cumin seed
  • 1 tsp herb, thyme, ground
  • 1/2 tsp salt
  • 1 1/2 tsp sauce, worcestershire
  • 1/2 tsp spice, cinnamon, ground
  • 1/2 tsp spice, nutmeg, ground
  • 1/3 cup honey
  • 14 ounces pineapple, chunks, cnd, w/juice

Recipe Method

1- Crumble ground beef into a large pan and brown; add Worcestershire sauce (optional).

2- Add onion, garlic, green pepper, zucchini and mushrooms. Cook until onion is translucent/brown and vegetables are tender. Drain oil.

3- Add tomatoes, jalapeño peppers, chili beans, chili powder, cumin, thyme, salt and cinnamon & nutmeg.

4- Stir and simmer on low for at least 25 minutes.

5- Add honey & pineapple & stir again.

Serve alone, over rice, or with a bun.

Serve with cheese & crackers is a must!

Oh--great with corn bread as well!
