Great Italian dessert.
1. Prepare 6 demitasse espresso and pour into a bowl. Add cocoa powder, Amaretto, 0.25 cup sugar and stir until dissolved.
2. Place 6 egg whites in an electric bowl mixer with whisk and beat until mixture forms stiff peaks.
3. In a separate bowl, whisk 6 egg yolks, mascarpone and ricotta with 0.25 cup sugar until creamy.
4. Fold the egg white, whipping cream and cheese mixture together.
5. Assemble: layer cheese mixture, lady fingers (dipped in espresso mixture), cheese mixture, lady fingers etc.
6. Refrigerate for 8 - 10 hours or overnight.
