This traditional Japanese dish is a lightly battered shrimp, fish or vegetable served with a side of tempura sauce.
1. To make dipping sauce, bring mirin to a boil then add dashi,soy sauce and lemon juice, bring to a boil another time and set aside.
2. Make several shallow cuts on the underside of the shrimp to make the shrimp lie straight and flat.
3. Lightly season shrimp with some salt.
4. To make the batter, place egg and ice water in a bowl and mix.
5. add the flour and lightly mix, allowing a few chunks to remain. Do not overmix.
6. Dredge shrimp in flour, then the batter, then deep fry until crispy in 360 F oil.
7. Serve shrimp with dipping sauce, and grated ginger and radish on the side.
Note: The shrimp in this recipe can be substituted with vegetables like zucchini, eggplants, red and green peppers or with other seafood.
