Pat's Orzo Salad

simple, delicious

This is a pasta salad and can be adapted to taste or increased for crowd.

Ingredients

  • 1 cup orzo
  • 1 cup olives, calamata, w/o pits, or black olives
  • 1/2 cucumber, chopped
  • 1/4 pound feta cheese, crumbled
  • 1/2 large onion, chopped
  • 2 tomatoes, fresh, med, chopped
  • 1/4 cup parsley, fresh, minced
  • 1/2 cup sweet bell peppers, chopped
Dressing
  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper, black

Recipe Method

1- Cook orzo to package directions. Let cool.

2- Combine salad ingredients in large bowl and toss.

3- Combine dressing ingredients in small bowl and mix.

4- Pour dressing over salad and toss until ingredients are lightly coated.

Refrigerate until served.

I use more tomatoes than called for, but you can improvise on the ingredients.
