Azeka's in Kehei, Maui had the best ribs ever. They have now closed and I have tried to duplicate their delicious marinade. Make yourself a chi chi and give it a try. Aloha.
1- In a bowl, mix together soy sauce, freshly chopped ginger, and garlic. (Use lots of both)
2- Add sesame oil, honey, brown sugar, and salt and pepper to taste. You can make as little or as much marinade as you like depending on how many ribs you want to prepare.
3- Marinate all day and over night. I put the ribs in ziploc bags so I can turn them frequently.
4- When you are ready to cook, place ribs on a pre-heated bbq for 4-5 minutes per side until the meat easily pulls away from the bone with a fork.
Enjoy!
