Peanut Butter Cream Cheese Pie

Absolutely delicious and rich.

Everyone I have served this to wants the recipe. Because of it's richness, only a small piece is required. It also freezes well.

Ingredients

Crust
  • 1 1/2 cup toasted pecans, chopped
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1/4 tsp cinnamon
Filling
  • 3/4 cup whipping cream
  • 1 1/4 cup icing sugar
  • 1 tbsp vanilla extract
  • 250 gram cream cheese
  • 1 cup peanut butter, creamy
  • 2 tbsp butter
Glaze
  • 2 ounce-weight baking chocolate, bar, semi sweet
  • 1 tbsp butter

Recipe Method

Crust:

1- Mix pecans, sugar, butter, and cinnamon. Press into a 9 inch pie plate or quiche pan.

Filling:

2- Beat whipping cream with 1/4 of the icing sugar and vanilla to form stiff peaks.

3- In another bowl, beat remaining one cup of icing sugar, cream cheese, peanut butter, and butter until well mixed and spreadable. Fold in whipping cream.

4- Spoon into prepared crust and put in fridge for a least two hours or until firm.

Glaze:

5- Melt chocolate and butter in the microwave being careful not to over-zap. Spread over the pie and return it to the fridge until chocolate sets. About 15 minutes.
