Fast Eddie's Caesar Salad

Excellent caesar dressing.

The perfect, 'real' Caesar.

Ingredients

  • 3 garlic cloves
  • 7 capers
  • 2 anchovies
  • 1 tsp dry mustard
  • 1 tbsp sauce, worcestershire
  • 1/8 tsp tabasco sauce
  • tsp salt
  • tsp black pepper
  • 1 tsp lemon juice
  • 1 egg yolks
  • 1/2 cup olive oil
  • 2 tbsp white wine vinegar
  • 1 head romaine lettuce washed & chopped
  • 1/4 cup cheese, parmesan, grated
  • 24 croutons

Recipe Method

1- Into large salad bowl, crush the garlic cloves and anchovies (or use anchovy paste) with a garlic press. Add capers and crush with a fork.

2- Add mustard, Worcestershire, Tabasco, and salt and pepper to taste. Mix extra well with the fork. Add egg yolk and lemon juice and mix well again.

3- Add to salad greens just before serving, along with croûtons and additional Parmesan cheese if desired.
