The perfect, 'real' Caesar.
1- Into large salad bowl, crush the garlic cloves and anchovies (or use anchovy paste) with a garlic press. Add capers and crush with a fork.
2- Add mustard, Worcestershire, Tabasco, and salt and pepper to taste. Mix extra well with the fork. Add egg yolk and lemon juice and mix well again.
3- Add to salad greens just before serving, along with croûtons and additional Parmesan cheese if desired.
