REALLY EASY!

This is great becasue I am not a pastry fan with Quiche. A little less calories in this.

Ingredients

  • 10 ounces fresh spinach or 2 packages frozen
  • 2 tsp vegetable oil
  • 1 tsp garlic cloves minced
  • 3/4 cup onions chopped
  • 2/3 cup ricotta cheese, 5%
  • 2/3 cup cottage cheese, 2% fat
  • 1/3 cup cheddar cheese shredded
  • 2 tbsp parmesan cheese grated
  • 2 eggs
  • 3 tbsp dill weed, fresh or 1 tbsp dried
  • 1/4 tsp black pepper

Recipe Method

1- Wash spinach and shake off excess water (or thaw frozen and squeeze dry).

2- Steam spinach and squeeze dry when cooled. Chop and set aside.

3- In a large nonstick skillet, heat oil over medium heat; add garlic, onions, and mushrooms and cook 5 minutes or until softened. Remove from heat and add chopped spinach, ricotta, cottage cheddar and parmesan cheeses, eggs dill and pepper. Mix well.

4- Pour mixture into sprayed 8" springform pan and bake for 35-40 minutes or until knife inserted in center comes out clean.

Cut into pie shaped pieces and serve.
