10 ounces fresh spinach or 2 packages frozen

2 tsp vegetable oil

1 tsp garlic cloves minced

3/4 cup onions chopped

2/3 cup ricotta cheese, 5%

2/3 cup cottage cheese, 2% fat

1/3 cup cheddar cheese shredded

2 tbsp parmesan cheese grated

2 eggs
-
3 tbsp fresh dill or 1 tbsp dried

1/4 tsp black pepper
Recipe Method
1- Wash
spinach and shake off excess water (or thaw frozen and squeeze dry).
2- Steam spinach and squeeze dry when cooled. Chop and set aside.
3- In a large nonstick skillet, heat oil over medium heat; add garlic, onions, and mushrooms and cook 5 minutes or until softened. Remove from heat and add chopped spinach, ricotta, cottage cheddar and parmesan cheeses, eggs dill and pepper. Mix well.
4- Pour mixture into sprayed 8" springform pan and bake for 35-40 minutes or until knife inserted in center comes out clean.
Cut into pie shaped pieces and serve.
