This is great becasue I am not a pastry fan with Quiche. A little less calories in this.
1- Wash spinach and shake off excess water (or thaw frozen and squeeze dry).
2- Steam spinach and squeeze dry when cooled. Chop and set aside.
3- In a large nonstick skillet, heat oil over medium heat; add garlic, onions, and mushrooms and cook 5 minutes or until softened. Remove from heat and add chopped spinach, ricotta, cottage cheddar and parmesan cheeses, eggs dill and pepper. Mix well.
4- Pour mixture into sprayed 8"
Cut into pie shaped pieces and serve.
