Peanut Butter Coconut Raisin Granola Bars

Great breakfast on the run.

This is really easy to make and great when you are eating in the car with coffee like me!

Ingredients

  • 11/3 cup oats, rolled, old fashioned
  • 2/3 cup raisins
  • 1/2 cup cereal, bran flakes
  • 1/3 cup coconut, dried, unsulfured, unsweetened, fine macaroon
  • 3 tbsp baking chips, chocolate morsels, semi sweet
  • 2 tbsp pecans, dried, chopped
  • 1 tsp baking soda
  • 1/4 cup peanut butter, creamy
  • 3 tbsp brown sugar
  • 3 tbsp butter
  • 3 tbsp honey
  • 1 tsp vanilla extract

Recipe Method

1- Mix together in a bowl the oats, bran flakes, coconut, chocolate chips, pecans and baking powder.

2- In a small saucepan whisk together peanut butter, brown sugar, butter, honey and vanilla over medium heat for about 30 seconds or justuntil the sugar desolves and the mixture is smooth.

3- Pour the melted mixture over the dry ingredients and stir until combined. Press mixture into a 13"x 9" baking pan and bake for 15-20 minutes at 350F until lightly browned.

4- Remove from oven and let cool. Once cooled, cut into bars.
