Pear and Spinach Salad with Basil

Make sure the pears are a little on the firm side.

Serve this to your girlfriends along with a couple of Cosmopolitans on a nice, warm summer day on the patio. It's sure to please. Bada Bing!

Ingredients

  • 3 cup bartlett pears sliced
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 3 tbsp olive oil
  • 1/4 tsp black pepper coarsely ground
  • 1/2 cup romano cheese shaved
  • 1/4 cup basil, fresh torn in small peices
  • 2 cup baby spinach leaves
  • 1/4 cup (or to taste) pecans, dried, chopped
  • 1/4 cup (or to taste) dried cranberries

Recipe Method

1- Peel and core the pears and cut each into 8 wedges.

2- Mix the vinegar and olive oil with the honey and toss with the pears.

3- Add the basil, spinach, dried cranberries, and pecans. Toss lightly.

4- Arrange on individual salad plates, sprinkle with the coarse ground pepper and Romano cheese.

Note: Make cheese shavings by drawing a vegetable peeler across a wedge of cheese.
