1-2-3 Cherry White Bean Salad with Tuna

Cherry Quick Tip: For a pretty presentation, serve this simple-to-make bean and tart cherry salad in Bibb lettuce or radicchio cups and add a sprinkle of snipped fresh chives for garnish.

Ingredients

  • 2 cans navy beans
  • 7 ounces light tuna in water
  • 1 cup dried tart cherries
  • 1/2 cup celery
  • 1/4 cup onion
  • 1/3 cup red wine vinaigrette
  • 1 tbsp dijon mustard
  • to taste salt
  • to taste black pepper

Recipe Method

1- Combine beans, tuna, cherries, celery and onion in a medium bowl. Stir together vinaigrette and mustard. Add vinaigrette mixture to bean mixture; toss until coated.

2- Season to taste with salt and pepper.

Makes 4 (1 1/3-cup) main-dish servings.
