Deep Fried Pork Cutlets

Ingredients

  • 16 ounce-weight pork, tenderloin, lean, raw
  • 1 pinch salt, table
  • 1 pinch pepper, black
Breading
  • 1 cup flour, all purpose, quick mixing, bleached, enrich, wondra
  • 1 Eggs, Beaten
  • 1 cup bread crumbs, japanese style, panko, b66817
Sauce
  • 6 tbsp sauce, worcestershire
  • 4 tbsp tomato ketchup (catsup)
  • 3 tbsp sauce, soy
  • 3 cup oil, canola, frying

Recipe Method

1. Take off as much fat and silver skin from tenderloin and pound pork to 1/2 cm thickness, then season both sides with salt and pepper.
2. Dust pork cutlets lightly with flour then dip once in egg and once more in breadcrumbs.
3. Slide pork into 320 F oil and then once both sides are a golden color, increase heat to 360 F for a nice crispy finish.
4. Pat dry excess oil with paper towels and slice pork into 1/2 inch strips.
5. Mix worcestershire sauce, ketchip and soy sauce and serve in a small sauce bowl.
