  • 2 sweet potato
  • 2 tbsp cherry juice concentrate
  • 1 tbsp brown sugar
  • 1 tbsp butter melted
  • 1/8 tsp ground ginger
  • 1 green onion sliced

Recipe Method

1- Scrub potatoes and halve lengthwise; do not peel. Spray nonstick cooking spray on baking pan.

2- Place potatoes, cut side down, in pan. Bake 30 to 40 minutes (or until almost tender) in oven, pre-heated to 400F.

3- Stir together cherry juice concentrate, brown sugar, butter and ginger. Turn potatoes cut-side up and brush with cherry mixture. Bake 5 to 10 minutes or until tender.

4- Sprinkle with green onion. Serve immediately.

Makes 4 servings.
