Asparagus Chicken

Good as an entree or as a side dish. You can double the serving if being used as a side dish.

A very tasty and eye-appealing dish. I marinate it overnight and can have a quick meal in minutes the next day served along with rice and a salad.

Ingredients

  • 2 tsp cornstarch
  • 1/4 tsp sugar
  • 1 tbsp soy sauce
  • 2 tbsp water
  • 2 garlic cloves crushed (or minced)
  • 2 tbsp olive oil
  • 1 boneless skinless chicken breast cut into 1/4" strips
  • 2 cup asparagus sliced diagonaly

Recipe Method

1- Stir together the cornstarch, sugar, soy sauce, water, and garlic.

2- Add the chicken and marinate at least 1 hour or overnight.

3- In a wok or skillet, over fairly high heat, heat the oil.

4- Add the chicken and marinade and then the asparagus and stir-fry for 3 minutes or until the chicken is cooked.

Serve immediately.
