Chicken Skewers in Yakitori Sauce

Ingredients

  • 14 ounce-weight chicken, broiler/fryer, thigh, w/o skin, raw
  • 1 cup leek, raw
  • 2 peppers, bell, green, sweet, fresh, lrg, 3"
  • 4 tbsp oil, canola, frying
Yakitori Sauce
  • 2 tbsp sugar
  • 4 tbsp wine, mirin, intl
  • 4 tbsp wine, sake/saki, japanese
  • 3 ounce-weight sauce, soy
Garnish
  • 1 pinch spice blend, chinese five spice, pwd, intl

Recipe Method

1. Cut chicken into 1/2 inch squares then cut the leek and bell peppers to roughly the same size as the chicken.
2. Skewer chicken, leek and bell peppers on the bamboo skewers.
3. Heat some oil in a frying pan and brown the skewered food, be careful not to color the meat too much. Lower the heat and cook for 8 minutes on each side.
4. Mix the sauce in a bowl and start brushing the chicken skewers with the sauce on all sides.
5. Continue to do so until sauce starts to form a glaze around the skewers.
6. Sprinkle chicken lightly with 5 spice powder.
