This comes as close as you can get to what you would get in a Chinese restaurant. My Caucasian teacher, George, was married to a Chinese lady and I think he stole her recipe.
1- Add oil to wok and heat. Do not leave the room! I went to the washroom the first time I made this and the whole thing caught on fire. Fry the chicken if raw first and season with salt.
2- Add the bok choy, celery, onion, bamboo shoots, and stir-fry.
3- Mix a gravy with the soy sauce, cornstarch, water, and chicken base. Add to the vegetables and chicken.

5- Beat 1 egg and fry like an omelet. Shred and sprinkle over platter of chow mein.
6- Sprinkle a few sesame seeds over all and serve.
