Chicken Chow Mein

Serve after you serve my Lettuce Wraps to Die For

This comes as close as you can get to what you would get in a Chinese restaurant. My Caucasian teacher, George, was married to a Chinese lady and I think he stole her recipe.

Ingredients

  • 2 cup bok choy cut in noodle or matchstick size
  • 2 cup celery cut in noodle or matchstick size
  • 1 1/2 cup onions cut in noodle or matchstick size
  • 1 cup bamboo shoots cut in noodle or matchstick size
  • 1 tsp salt
  • 2 tbsp light soy sauce
  • 6 tbsp vegetable oil
  • 10 ounce-weight cooked chicken breast
  • 2 tbsp chicken base
  • 1/2 cup water
  • 1 tbsp cornstarch
  • 1 package chow mein noodles deep fried
  • 2 cup bean sprouts
  • 1 eggs

Recipe Method

1- Add oil to wok and heat. Do not leave the room! I went to the washroom the first time I made this and the whole thing caught on fire. Fry the chicken if raw first and season with salt.

2- Add the bok choy, celery, onion, bamboo shoots, and stir-fry.

3- Mix a gravy with the soy sauce, cornstarch, water, and chicken base. Add to the vegetables and chicken.

4- Add the bean sprouts. Sprinkle the noodles on top, cover, and cook on low until the noodles are steamed soft.

5- Beat 1 egg and fry like an omelet. Shred and sprinkle over platter of chow mein.

6- Sprinkle a few sesame seeds over all and serve.

Pass the chop sticks and the fortune cookies.

Serve with lots of green tea.
