We love Mexican and a good burrito. I like mine wet and juicy, so I created this one based on one my husband was describing to me.

1 tbsp mole sauce

1 tbsp chili powder

1/2 tsp sea salt

2 cup cooked brown rice

2 tbsp coconut oil

1/2 cup vegetable broth
Recipe Method
1- Heat
coconut oil in a
pan. Add onions and
garlic and
saute for 3 to 5 minutes. Add
tomato paste and
mole with. Mix well. Add remaining ingredients, mix.
Simmer for 5 to minutes on low heat.
2- Wrap mix in your favorite tortillas and serve hot.
You can add refried beans and other ingredients like vegan sour cream and cheese.
