Vegetable Burritos

We love Mexican and a good burrito. I like mine wet and juicy, so I created this one based on one my husband was describing to me.

A very simple burrito packed with nutrition and very few ingredients.

Ingredients

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 garlic cloves minced
  • 1 cup onions chopped
  • 20 white mushrooms button
  • 8 ounce can tomato paste
  • 1 tbsp mole sauce
  • 1 tbsp chili powder
  • 1/2 tsp sea salt
  • 2 cup cooked brown rice
  • 2 tbsp coconut oil
  • 1/2 cup vegetable broth

Recipe Method

1- Heat coconut oil in a pan. Add onions and garlic and saute for 3 to 5 minutes. Add tomato paste and mole with. Mix well. Add remaining ingredients, mix. Simmer for 5 to minutes on low heat.

2- Wrap mix in your favorite tortillas and serve hot.

You can add refried beans and other ingredients like vegan sour cream and cheese.
