My husband Rupert love a spicy dish. One year we decided to put a twist to the traditional cole-slaw and add a few additional ingredients.
1- Put tahini, mayonnaise, sugar, and a little salt into a bowl. Stir in the cider vinegar. Sometimes when you add the cider vinegar it curdles. Don’t worry. Just keep stirring, and it will blend together.
2- Add the cole slaw mix and raisins. Stir well making sure to evenly coat.
3- Dry fry the cashews and celery seeds in a pan over a high heat until browning begins to occur. Shake in the soy sauce, and continue to stir as it evaporates.
4- Add nuts to cole slaw mixture and stir.
5- Refrigerate for 2 hours or until time to serve. If coleslaw becomes dry just add more mayonnaise and a little sugar.
Variations: Add green onions, pineapples, or other nuts.
