This recipe gives you a break from traditional ground beef in Mexican dishes by using ground turkey. When people hear that there's turkey in it, they're a little leary about it at first, but everyone says you can't even tell it's turkey!
Preheat oven to 355 degrees
1- On stove, cook turkey until it is mostly brown, add the chopped green onions to the turkey and cook until turkey is all the way brown then remove from stove
2- Place foil on a baking sheet (this is for easy cleanup). Take a tortilla and brush lightly with olive oil on both sides (this will help the tortilla become nice and crips in the oven)
3- Place tortilla flat on top of foil that's on the baking sheet. Sprinkle about 1/4 cup of shredded cheese on half of the tortilla (you will end up folding the other half of the tortilla over).
4- Take some of the already-browned ground turkey and place it on top of the cheese that's already on the tortilla. Take another 1/4 cup of cheese and sprinkle on top of that. Take 1-2 tablespoons of Salsa and spread it over the top
6- Place in oven and bake for about 10-12 minutes, or until you see the cheese is melted and the edges of the tortilla are browning.
Serve along with sour cream, lettuce, or guacamole, if desired.
*Tip: An easy way to eat it is to cut each quesadilla into fourths- it makes it much easier to handle.
