Sweet and Sour Caramelized Onions

Excellent side dish to accompany any entree.

This is for onion lovers. The lovely sweet taste of the carmalized onions combined with a slightly sour taste is sure to please all.

Ingredients

  • 4 onions (Spanish, Walla Walla, or Maui)
  • 1/4 cup cider vinegar
  • 1/2 cup unsalted butter melted
  • 1/2 cup water boiling
  • 1/2 cup dark brown sugar packed
  • to taste salt
  • to taste black pepper
  • to taste paprika
  • to taste fresh parsley chopped

Recipe Method

1- Slice onions 1/4" thick and arrange in layers in a 13 x 9" baking dish, no more than three slices thick.

2- In a small bowl, mix the vinegar, melted buter, water,and brown sugar.

3- Pour over the onions.

4- Sprinkle top with salt,pepper,and paprika.

5- Bake at 300 F. for 1 3/4 to 2 hours until onions are tender, brown and caramelized slightly.

Remove from oven and sprinkle with parsley.
Serve immediately.
