This dish appeals to kids and adults. Its healthy and makes excellent left overs!!
1- Heat a large skillet over med heat. Coat pan with light cooking spray. Add leek; saute for about 5 minutes.
2- Add the garlic, saute for approx 1 minute.
3- Add beef; cook for 7 - 8 minutes or until cooked, stirring to crumble. Stir in curry paste and tomato sauce, cook until half of liquid evaporates (approx 2 mins).
4- Add milk and rest of the ingredients.
Serve with rice and lettuce wraps.
