Scrumptious Shiitake Mushroom Broth

Excellent as broth for Udon noodle soup, with nutritional and medicinal properties to boot !

Ingredients

  • 6 cup water, filtered
  • 10 shiitake mushrooms
  • 1 handful dried wakame seaweed
  • 2 garlic cloves
  • 1 tbsp ginger, grated
  • 4 scallions, smashed & cut in length
  • 1 carrot, julienned or grated
  • to taste salt
Optional
  • to taste tamari
  • 1 tsp sesame oil
  • to taste cayenne pepper
  • 1/4 tsp sugar

Recipe Method

1- In medium size pan, bring all ingredients to boil and simmer on low heat for 45 minutes.

2- Strain and pour into serving cup or bowl. Serve with Udon noodles, sliced shiitake mushroom and chopped scallions, if desired.
